Gnocchi

Yesterday, we made vegetarian’s pie and cooked an extra 650g of potatoes in preparation for making gnocchi today. Gnocchi is not only delicious and easy to make, it is also fun to make especially if you have children wanting to help in the kitchen.

Ingredients

  • 650g potatoes (cooked and mashed)
  • 200g plain flour
  • 1 egg (beaten)
  • Salt and pepper
    and
  • A pasta sauce (see below)

Once you have mashed your potato, leave to cool and then add the flour along with some salt and pepper.

Now add the egg.

Stir these together and then, using your hands, bring the mixture together to form a dough.

Turn the dough out onto a floured surface and cut into four pieces.

Roll each piece into a sausage shape about 2.5cm in diameter and cut the individual gnocchi trying to keep them about the same size.

Cook the gnocchi in batches in boiling water. When they first go into the water, they will sink to the bottom, as they cook they rise to the surface. Once they are on the surface of the water, scoop them out with a slotted spoon.

Serve them hot with your favourite pasta sauce. Today, we chose cheese sauce with sage (from the garden). Yum.

      • Still struggling to get flour – everyone is baking! Got a little bread flour and made bread. But might have a little plain flour lurking so will have a go later in week. I love the pictures of steps – helps a lot
