We had a few apples that needed using-up; so, this afternoon, I decided to make spiced apple slices. They are another easy recipe and are delicious with an afternoon cup of tea.
Ingredients
- 85g butter
- 150g sugar
- 2 eggs
- 230g self-raising flour
- 1/2 teaspoon of baking powder
- 3/4 teaspoon of mixed spice
- 3/4 teaspoon of cinnamon powder
- 3 (or 4) apples
Start by creaming together the butter and sugar. This is much easier if the butter is at room temperature.
Add the eggs and continue to beat.
Sift the flour and baking powder into a bowl and add the mixed spice and cinnamon powders.
Mix this into the butter/sugar/egg mixture and beat until smooth.
Peel, core and dice the apple, add them to the mixture and fold in.
Spoon the mixture into a lined and oiled baking tin. I use a square tin (20 x 20 cm) to produce rectangular slices.
Back at 170C for 45 minutes. Remove from the oven and allow to cool for about five minutes before turning out onto a cooling rack.
Cut into slices.
And, enjoy with a cup of Assam tea (loose-leaf of course)
