Healthy chocolate chip cookies

Of course, these aren’t healthy… but they are, we think, healthier than some. They use less sugar, less chocolate than most recipes and the use of wholemeal flour gives a delicious, slightly nutty flavour. Give them a go…

Ingredients

  • 150g butter
  • 50g white sugar
  • 50g brown sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 225g plain wholemeal flour
  • Half teaspoon baking powder
  • Quarter teaspoon salt
  • 100g chocolate chips

Start by weighing out the butter (best at room temperature) and the sugars. Beat these together until smooth and creamy.

Add in the egg and the vanilla essence and beat these into the mixture.

Weigh out the flour and add the baking powder and salt.

And add to the mixture and stir to combine.

Add in the chocolate chips and combine.

It is now time to form the cookies. If the mixture feels too sticky, chill for 20 minutes before starting to shape.

You should be able to make about 24 cookies from this mixture. Divide the mixture and, using your hands, roll into balls and place onto buttered baking trays.

Bake these at 180C for about 10 minutes.

Leave them to cool slightly on the trays and then carefully lift onto a cooling rack. Once cool, they are fabulous with a cup of Assam tea (loose leaf of course).
